Ingredients: 1 small onion (chopped) 1 large clove of garlic (chopped) 4 medium zucchini 1/4 cup grated Parmesan, 1/2 cup or more fresh bread crumbs. 4 beaten eggs and mix well.
Directions: Coarsely shred zucchini. Salt and allow to drain. Squeeze dry. Sauté onion and garlic until translucent. Add zucchini and allow bottom to caramelize before stirring. Remove from heat. Add 1/4 cup grated Parmesan, black pepper to taste, about 1/2 cup or more fresh bread crumbs. Mix well. Add 4 beaten eggs and mix well. Cook on medium high heat in an omelet pan with warm olive oil. When brown (about 4 minutes) turn over and cook the other side until brown.
