Ingredients:
Ciabatta bread Fresh tomato Fresh mozzarella (ideally the medium or large size) Balsamic glaze (home made or store bought) A few leaves of basil Directions: Oil the top and bottom of the ciabatta roll Heat a pan using medium heat (or use a panini maker if you have one). Drizzle balsamic glaze on the bottom half of the ciabatta and then layer the tomato, fresh mozzarella, chopped basil. Drizzle balsamic glaze on the top half of the ciabatta. Place face down in the pan and press down with a spatula until the top is golden brown and crunchy. Flip over and do the same.

Pre-heat oven to 400ºF. Line a cookie sheet with parchment paper. Put tortilla on parchment. Spread sauce on the tortilla and sprinkle some cheese. Bake for about 15 minutes or until crispy. Ingredients: Slices sourdough bread 5 year aged, white cheddar cheese (If I can't get to a cheese shop, use Kerry Gold Vintage Cheddar) Super thinly sliced, dry salami Directions:
Grate cheese. Butter the outside of the sourdough bread pieces. Heat a skillet. Add grated cheese, some sliced salami, and a little cheese on top of that. Add to the skillet and use a pan lid to rest on top of the sandwich. When lightly browned, flip the sandwich over. (probably easier in a panini maker, but I don't have one) |
