1 cup warm water
1 small packet of yeast (about 1 1/2 teaspoon) 1 tsp. salt 1 tsp. sugar 2 Tbl. oil 2 1/2 cups bread flour (all purpose can work too) Directions: In a large mixing bowl, bloom the yeast in water and sugar (temperature of water should be about what you would find comfortable to the touch. Too hot, and you'll kill the yeast). Let stand for 10 min to make sure yeast is activated Add Salt. Mix together let rise 10 minutes. Pour a GENEROUS amount of olive oil onto the cookie sheet. Spread on cookie sheet (stretch and press it until you can't stretch anymore. It takes a bit of time. If you don't make it to the edges, don't worry. If it seems thin, don't worry. It will look fine!). I put olive oil on my hands to keep from sticking. Put on toppings and let rise for about 10 minutes Bake @ 400 for 20 minutes or until golden brown at the edges. .
